Our flours
How long will the flour last?
We recommend using your flour within 3-4 months, though you may freeze your flour and thaw as needed.
How does this flour differ from the grocery store flour options?
Melgard Farm flours are freshly milled weekly or to order and never enriched or bleached to maintain maximum flavor and nutrition. Consider that store flour is already weeks, possibly months old by the time you are using it. We call that “dead” flour. Taste the difference that fresh living flour will make in your bakes!
Non GMO vs grains that have been bred - what’s the difference?
GMO stands for genetically modified organism, a plant that has been changed on a genetic level to perform differently. We do not use any GMO grains at Melgard Farm. However, we do have a handful of varieties that have been bred to create a more ideal crop. This is as simple as punnet squares in Junior High. Pollinating a pink pea plant with a purple pea plant to make a blue pea plant! There is zero genetic modification happening, only mixing. Our Joaquin Oro is a fine example of a bred grain.
What is stone milling?
Stone milling is an old world practice of using two circular stones to flake off bran from the berry and then grind the endosperm into flour. This process keeps the integrity of the grains’ nutrients and helps to enhance the flavor by bringing out the natural oils in every grain. The flavor and texture of stone ground flour is exceptional!
Does stone milled flour perform like regular flour from the store?
No, stone milled flour tends to be more thirsty! We recommend using around 10% more liquid in your recipes when working with our flour, but you know your dough best! You will find what works best for your recipes.
