Oatmeal Flax Chocolate Chip Muffins

Wholesome whole wheat muffins studded with chocolate chips get a nutritious boost from oats and flax seeds.

Makes 12 muffins

Ingredients

1 cup whole wheat pastry flour

¼ cup ground flax seeds

¼ cup rolled oats

⅓ cup granulated sugar (or coconut sugar)

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 egg

¼ cup melted butter

1 cup milk

Chocolate chips of your choice

Instructions

Preheat your oven to 350. Line a 12 cup muffin tin with baking cups.

Add all dry ingredients to a stand mixer, stir together. Then add all wet ingredients to the mixer and mix.

Add chocolate chips of your choice to the batter, mix until just distributed throughout.

Fill each muffin cup about ¾ of the way, distribute any extra batter evenly between the cups.

Bake for 22 minutes & enjoy!
