Buttery Breakfast Scones
Tender, buttery scones with a light crumb and rich flavor, perfect for an easy homemade breakfast.
Ingredients
½ cup cold butter
¼ cup sugar
1 egg
1 tsp vanilla
½ teaspoon salt
2 teaspoons baking powder
⅛ teaspoon baking soda
235 grams flour
120 grams milk or buttermilk
Inclusions of your choice - lemon, chocolate chips, blueberries etc.
Tips before beginning
Be exact with the liquid measurement, I recommend using a kitchen scale for this recipe.
Do not knead or over-mix the dough.
Freeze butter before - not necessary but helpful!
Instructions

Preheat oven to 400 degrees.

Combine flour, baking powder/soda, sugar, and salt in a bowl. Grate butter into the mixture, stir gently. If adding inclusions, do so now but fold in gently.

Add the milk or buttermilk, egg and vanilla to your bowl and mix until just combined.

Turn dough out onto floured surface and shape into a ball, then flatten by hand until about an inch thick. Do this process quickly and with minimal touching to keep the butter as cold as possible.

Cut the disc into 8 equal triangles and place on a parchment lined baking sheet. Bake for 20-23 minutes. Enjoy!
