Sourdough Burger Buns

Soft, buttery burger buns with a hint of sourdough tang.

Makes 8 - 12 buns

Ingredients

1 cup and 2 tablespoons warm milk (100-105 F)

1 cup discard starter

4 cups bread flour

¼ cup sugar

2 egg yolks (not the whole egg)

½ cup butter softened

1 teaspoon yeast 

2 teaspoons salt

Mix the warm milk, yeast, and sugar in a bowl, let it become foamy on the top - about 5 minutes.

Add your softened butter, starter, egg yolks, salt and the yeast mixture to a stand mixer. Let it go for 7 minutes until the dough is silky smooth.

Cover the bowl and let it rise in a warm place until doubled in size.

Once risen, separate the dough into 8 equal size balls (around 135 grams each) or 12 equal size balls (around 90 grams each). Tighten the dough balls into nice rounds and place on parchment paper. Cover and let rise again for 30 minutes.

Preheat your oven to 350 while the dough is rising.

Bake for 22 minutes or until golden brown. Enjoy!

Tip

If you want to freeze the buns, let them fully cool before placing them in an airtight bag and freezing.
